The infamous "Pimm's Shortage of 2013" turned out to be extremely convenient for us. Since we were forced to delay this recipe by almost a month, Pimm's jellies became the 4th course of an extravagant eight course feast prepared by Robin and our very good friend Mary. This was my contribution to the feastivities.
Thank goodness Robin speaks British because in England lemonade is actually lemon-flavored soda. I don't know if it would have made that much of a difference if I'd used real lemonade instead since I was just boiling it, but it's usually best not to deviate from the recipe. As it was, I totally messed up and let the gelatine cool for too long so I had to start all over.
Hey, look - this dish is healthy! I forgot about the gelatine because I was so busy cutting up all this fruit.
Luckily, my second attempt at the gelatine was a success and with the fruit cups setting in the fridge for a few hours, it was time to prepare the orange mascarpone cream.
All it takes is some orange zest and juice, sugar, mascarpone, heavy cream and, if you're a wuss like me, a good hand mixer.
The whipped cream looked awesome after it had chilled out:
How pretty! My little jellies were a good break between the beef and fish courses and they provided some visual refreshment too. An excellent summertime snack or dessert, for future reference.
