Pancaaaaakes

There are people who have cravings for pancakes - enough, apparently, to justify an International House of them. I've never been one of those people; there are so many better breakfast foods! And to be honest, this recipe isn't changing my mind. Thought: Gordon secretly wants people to be in better shape, and so he makes his sweet recipes distinctly average. Second thought: we're not nearly as good at cooking as he is.



I have to admit that looking at this picture I had no idea what it would become. Coconut milk, dessicated coconut, four limes, a mango? This is for pancakes? Really?



I've made my fair share of simple syrup for bar use over the years, but this was my first stab at a flavoured version. Turns out it's really just as easy as the regular kind, with - as you'd expect - flavour added. In this case, lime zest and juice. Let it boil away and become oh so tasty.



Just your standard pancake batter - egg, flour, coconut milk, dessicated coconut... wait, what?



Normally you'd ladle your batter on to the skillet. Here it's more of a glop. My hopes, they are not high.



And yet, and yet! What have we here? Fluffy, rising, golden brown? (Obviously these aren't the first batch. The first batch never works. That's just a universal rule of pancakes.)



And so here we have it! Coconut pancakes dressed with lime syrup and sliced fresh mango. Obviously mangoes covered in syrup are delicious... the pancakes, though, are a little weird. From a flavour standpoint everything works fairly well, but the texture of the coconut is hard to get past. In the end, it's just not pancakes.
